Cookies and Cream Cheesecake Stuffed Cookies

Ingredients


Cream Cheese Filling:


- 1/2 cup (125g) cream cheese – beat for about a minute

- 1/4 cup (35g) icing sugar

- 1/4 teaspoon vanilla extract


Cookie Dough


- 1/2 cup (113g) cold butter – beat for about 2 minutes

- 1/4 cup (50g) granulated sugar

- 1/2 cup (100g) brown sugar

- 1 large egg

- 1 teaspoon vanilla extract

- 1 1/4 cups (150g) all-purpose flour

- 1/2 cup (55g) cake flour

- 1 tablespoon (7.5g) cornstarch

- 1/4 cup (30g) black cocoa powder

- 1 1/2 teaspoons (8g) baking powder

- 1/2 teaspoon (3g) baking soda

- 1/2 teaspoon salt

- 1 cup chopped Oreos

- 1/2 cup white chocolate chips

- 1/2 cup semi-sweet chocolate chips

chocolate and Oreo for topping


Instructions


1. Prepare the cream cheese filling. Beat cream cheese for 1 minute until smooth. Add icing sugar and vanilla extract. Mix until creamy.

2. Divide the mixture into 6 equal portions and freeze for 20 to 30 minutes.

3. Make the cookie dough. Beat cold butter for 2 minutes until slightly softened.

4. Add granulated sugar and brown sugar. Mix until well combined.

5. Add egg and vanilla extract. Mix well and scrape down the bowl.

6. Add all-purpose flour, cake flour, cornstarch, black cocoa powder, baking powder, baking soda, and salt. Mix until fully incorporated.

7. Scrape down the bowl and add chopped Oreos, white chocolate chips, and semi-sweet chocolate chips. Mix until well combined.

8. Scoop out 6 equal portions of dough. Each portion should weigh approximately 105g.

9. Roll the dough into balls, flatten in your hands, place a frozen cream cheese portion in the center, and cover with the dough.

10. Freeze for 15 to 20 minutes before baking.

11. Bake at 375°F (190°C) for 14 minutes.

12. Remove from oven and immediately place chopped white and semi-sweet chocolates on top.

13. Press half an Oreo cookie in the middle. Let the chocolate melt into the hot cookies, then make swirls.

14. Let the cookies set for 2 to 3 hours so the cheesecake filling inside fully sets.
