Snickerdoodle Crumb Cake Cookies

Ingredients:


Cookies:

• ½ cup butter (113g)

• ½ cup granulated sugar (100g)

• 2 tablespoons brown sugar (25g)

• 1 large egg

• 1 teaspoon vanilla extract

• 1 & ½ cups all-purpose flour (180g)

• 1 tablespoons cornstarch (10g)

• ½ teaspoon cream of tartar

• ½ teaspoon baking powder

• ¼ teaspoon baking soda

• ½ teaspoon cinnamon

• ¼ teaspoon salt


Cinnamon Sugar Mixture:

• ¼ cup granulated sugar

• ½ teaspoon cinnamon


Topping:

• Remaining cinnamon sugar mixture

• ½ cup all-purpose flour

• 3 tablespoons butter

•cup white chocolate

• 1 teaspoon coconut oil


Instructions:


1. Cream together butter, granulated sugar, and brown sugar until light and fluffy.

2. Add egg and vanilla extract, mixing until combined.

3. Mix in all-purpose flour, cornstarch, cream of tartar, baking powder, baking soda, cinnamon, and salt until smooth dough forms.

4. Roll the dough into balls and coat them in the cinnamon sugar mixture.

5. Place dough balls on a baking sheet and gently press with your hands.

6. Bake at 350°F (175°C) for 12 minutes. Let cookies cool completely.

7. Spread flour on a baking sheet lined with parchment paper @325°F for 10 minutes. Mix remaining cinnamon sugar with flour and butter to create the streusel topping.

8. Melt white chocolate with coconut oil and drizzle over cooled cookies.

9. Sprinkle the streusel topping over the melted chocolate.
