Apple Crisp Cheese Cakes


##Apple Crisp Mini Cheese Cake

__Ingredients__

- 1 cup graham crackers crumbs

- 1 1/2 tbsp sugar

- 1/2 tsp ground cinnamon

- 3 tbsp melted butter


- 1/3 cup all purpose flour

- 1/3 cup rolled oats

- 1/3 cup brown sugar

- 1 tsp ground cinnamon

- a pinch of ground nutmeg

- 3 tbsp melted butter


- 250 grams cream cheese

- 1/3 cup sugar

- 1 egg

- 2 tsp vanilla extract

- 1 tbsp all purpose flour


- 2 apples

- 2 tsp lemon juice

- 1 tsp ground cinnamon

- 1/4 tsp ground nutmeg

- 1 1/2 tsp cornstarch

- 2 tbsp brown sugar


- 1/2 cup heavy cream

- 1/4 cup icing sugar

- 1 tsp vanilla extract


__Recipe__


1. For Crust : Mix 1 cup graham crackers with 1 1/2 tbsp sugar, 1/2 tsp cinnamon, 3 tbsp melted butter. Cheesecake crust is ready.

2. For Crumble Topping : mix 1/3 cup all purpose flour, 1/3 cup rolled oats, 1/3 cup brown sugar, 1 tsp ground cinnamon, a pinch of nutmeg with 3 tbsp melted butter. Mix thoroughly.

3. Cream Cheese Mixture: beat cream cheese with 1/3 cup of icing sugar, 1 egg, 2 tsp vanilla extract, 1 tbsp all purpose flour. Mix until smooth.

4. Apple Crisp: peel and chop 2 apples. Pour 2 tsp lemon juice. Add 1 tsp cinnamon 1/4 tsp nutmeg, 1 1/2 tbsp cornstarch, 2 tbsp brown sugar. Mix thoroughly.

4. Recipe make 6 big or 12 regular sized muffins. I’m making 6. Put 2 tbsp graham crackers mixture at the bottom of the muffin liners. Press it down with a cup.

5. Fill 2/3 of muffin liners with cream cheese mixture.

6. Pour 1 tbsp of apples at the cream cheese.

7. Top it with crumble mixture.

8. Bake it @350°F for 25-30 minutes.

9. Let it cool down in the pan for 15 minutes then remove the liners and keep it in the fridge for 15 minutes.

10. For Frosting beat cream with icing sugar and vanilla extract until thickened. Put 1 scoop of whipped cream at the top of each muffin.

11. Drizzle some caramel sauce at the top.
