Neapolitan Bundt Cake



Ingredients For Cake


3 cups of sugar (600g)

1 & 1/2 cup of butter (340g)

6 large eggs

2 teaspoon of vanilla extract

1 cup sour cream (240g)

3 cups cake flour/ all purpose flour (360g)

1/2 teaspoon baking soda

1/2 teaspoon of salt

1/4 cup strawberry jello (50g)

1/3 cup cocoa powder (35g)


Ingredients For Glaze


1 & 1/2 cups powdered sugar

2 tablespoon heavy cream

1/2 teaspoons vanilla extract

1 tbsp cocoa powder + 1 tsp cream

2 drops of pink food colour



Recipe


Preheat oven to 325°f

Grease 12 cup bundt pan with butter then grease with spray oil.


  1. Sift flour, baking soda and salt in a small bowl then set aside.

  2. In a large bowl add butter then mix on high until it's light and fluffy about 4-5 minutes.

  3. Scrape down the bowl with a rubber spatula then add the sugar. With the mixer on med/high beat for 2 minutes until the mixture is light and fluffy. Scrape down bowl.

  4. Add sour cream and mix for about 1-2 minutes.

  5. Turn mixer on low and add eggs one at time making sure each is fully incorporated before adding the next.

  6. Add half of the sifted flour and mix until incorporated. Then add the rest and mix Use a rubber spatula to fold in the remaining streaks of flour.

  7. Divide the batter into 3 portions.

  8. Mix 1/4 cup strawberry jello and 1 or 2 drops of pink food colour in one portion. Mix 1/3 cup cocoa powder +1 tbsp milk in 2nd portion and leave the third portion as it is.

  9. Pour the batter into the prepared bundt pan. Pour strawberry batter at the bottom and spread it evenly with a spatula then pour vanilla batter and spread it and pout chocolate batter at the top and spread evenly.

  10. Bake for 1 hour 20-25 minutes .

  11. Let the cake rest for 10-15 minutes then turn out of the pan to completely cool.

  12. Mix the ingredients of glaze and divide into three portions. Mix 2 drops of pink food colour in first portion. Then mix 1 tbsp cocoa powder and 1 tsp cream in 2nd portion and leave the third portion as it is.

  13. Put the glaze in piping bags and drizzle on top of the cake one by one.
