Assorted Cupcakes With 1 Recipe




Ingredients


  • 2/3 cup butter (160g)

  • 1 & 1/2 cup sugar (300g)

  • 1/4 cup oil (60ml)

  • 4 eggs

  • 2 tsp vanilla extract

  • 3 cups all purpose flour (360g)

  • 2 1/2 tsp baking powder (12g)

  • 1 & 1/2 cup milk (354g)

  • 1/2 tsp salt

  • Pistachios, pecans, chocolate chips & crushed coconut for top



Crumble Topping


  • 3 tbsp melted butter (40g)

  • 1/4 cup sugar (50g)

  • 2/3 cup flour (80g)


Chocolate Ganache


  • 1 cup semi sweet chocolate chips (170g)

  • 1/2 cup heavy whipping cream (120g)



Recipe


  1. Beat butter, sugar and oil together until well combined.

  2. Add 4 eggs and vanilla and mix until well blended.

  3. Add warm milk and mix.

  4. Mix dry ingredients into the wet and mix until well combined. Scrape the bowl with spatula.

  5. Grease your baking pans and align them with parchment paper. Grease parchment paper and pour the cake batter. This recipe makes 24 regular sized cupcakes. I’m making 6 mini loaf cakes and 6 cup cakes.

  6. Fill the pans halfway and flatten them with a spatula.

  7. Bake @350°f for 20-25 minutes.

  8. Let the cakes set for 10 minutes in the pans. Then remove from the pans and cool completely on a wire rack.

  9. Pour heavy whipping cream on 1 cup chocolate chips and microwave for about 1 minute. Mix until you get a smooth ganache.
