__Ingredients__
- 2 cups warm water (454g)
- 2 tsp instant yeast (6g)
- 1 tbsp olive oil (14g)
- 2 tsp salt (12g)
- 4 cups bread flour or all purpose flour (512g)
- 3 tbsp olive oil for grease and topping
- vegetables and herbs
__Recipe__
1. Pour warm water into a large bowl.
2. Add yeast, oil and salt and stir.
3. Add flour and mix. The dough is soft and easy to mix with a spoon. You don't need to knead. Clean the spoon and cover the dough with a wrap and let it rest for half an hour for the first rise.
4. Remove the wrap. Soak your hand in clean water. Grab the 4 sides of the dough and fold them to the center. Soak your hand before each fold. Cover and let it rest for half an hour for the second rise.
5. Remove the wrap. Let's do the same process as before one more time. Stretch and fold the 4 sides.
It only takes two minutes to roll the dough. Cover again for half an hour for the third rise.
6. Grease the tray with 2 tablespoons of olive oil. Be generous, focaccia loves olive oil. Transfer the dough into the tray. Roll the dough in olive oil and spread it into the dish. Cover for 30 minutes.
7. Remove the wrap and drizzle a little bit olive oil. Dimple the focaccia with your fingers.
8. Top it with your favourite toppings. I’m using some onions, grape tomatoes, rosemary and olives. Lightly brush vegetables with olive oil. This will help to prevent them from browning.
9. Sprinkle some sea salt at the top and Bake in the oven on the center rack at 425°F for 25-30 minutes.
10. Take it out of the pan. Serve it warm.
The bread is very bubbly, perfect crusty and chewy. Enjoy!
