Blueberry cheesecake buns are soft, fluffy buns filled with a creamy cheesecake center and sweet, tangy blueberries. They’re a delightful treat that’s perfect for any time of the day!
__Ingredients__
- 2 1/4 tsp yeast (7g)
- 1 cup milk (240g)
- 2 tsp sugar
- 2 eggs yolks
- 2 tsp vanilla extract
- 1/4 cups sugar (50g)
- 3 cups all purpose flour (360g)
- 1/2 tsp salt
- 1/3 cup soft butter (76g)
Cheesecake Ingredients
- 8 oz cream cheese (226g)
- 1/4 cup sugar (50g)
- 1 tsp lemon juice
- 1 tsp vanilla extract
Topping
- 1/2 cup frozen blueberries
- 1 egg+ 1 tbsp water
- 1 tbsp melted butter
Recipe
Pour yeast with 2 tsp sugar in 1 cup warm milk. Stir well and cover for 10 minutes.
Remove the cover and stir again. Add egg yolks, 1/4 cup sugar, vanilla extract and salt. Mix well.
Take 3 cups all purpose flour in a large bowl and add the yeast mixture into it. Use dough mixer or mix by hands until combined.
Add butter and knead for 7-8 minutes until you get a smooth dough.
Cover the dough for 1-2 hours or until doubled.
Remove the cover and punch the air out. Take the dough out of the bowl and make a soft ball.
Place the dough on floured surface and divide it into 6 equal portions.
Roll each portion into a ball and place all the dough balls into a lined baking sheet. Cover for 30 minutes.
Remove the cover and use a cup or a glass to press in the centre of the dough balls.
Mix the cheesecake ingredients together until smooth and pipe in the centre of the dough balls.
Top it with frozen blueberries.
Apply egg wash on the buns and bake @375°F for 20 minutes.
Apply melted butter on warm buns.
