Café Style Chocolate Chip Muffins

__Ingredients__


- 1 cup sugar

- 1/4 cup cooking oil/ coconut oil

- 1/3 cup melted butter

- 2 eggs

- 1 tbsp vanilla extract

- 2 1/2 cup all purpose flour

- 1 tsp baking soda

- 1/2 tsp salt

- 1 tbsp baking powder

- 1 cup buttermilk

- 1 cup mini chocolate chips

- 1/4 cup mini chocolate chips & 1 tbsp sugar for top


__Recipe__


1. Beat sugar, oil and butter together until well blended.

2. Add 2 eggs.

3. Add vanilla and mix again.

4. Add sifted flour in batches along with salt, baking powder and baking soda. Mix well.

5. Add butter milk if you don’t have butter milk, add 1 cup milk with 1 tbsp lemon juice or 1 tbsp vinegar.

6. Add chocolate chips and fold with spatula.

7. Grease your muffin liner. You can make 12 regular sized muffins or 6 jumbo muffins.

8. Pour your mixture equally into the liners.

9. Sprinkle some sugar and chocolate chips.

10. Bake at 400°F for 7-8 minutes then reduce the heat and bake at 350° for additional 15 minutes.

NOTE: If you’re baking 12 muffins then bake at 400°F for 5 minutes then at 350°F for 10 minutes.
