This homemade Chicken Bread is stuffed with a delicious, creamy chicken filling with vegetables and mozzarella. You can boil and shred chicken yourself or use a Rotisserie Chicken or even leftover Turkey works great!
__Ingredients for Bread__
- 3 cups all purpose flour (360g)
- 1 tsp salt
- 1/2 cup water
- 1/2 cup milk
- 2 tsp yeast
- 1 tbsp sugar
- 1 egg
- 3 tbsp melted butter
__Ingredients for Filling__
- 1 tbsp oil
- 3-4 cloves garlic
- 220g chicken
- 1/2 onion
- 1/2 bell pepper
- 1/2 carrot
- 1/2 cup parsley
- 2 tbsp all purpose flour
- 1 tbsp butter
- 1 cup cream
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp white pepper
- 1 tsp thyme or other herbs
- 1 cup shredded mozzarella cheese
- 1-2 tbsp mayonnaise
__Topping__
- 1 egg + 1 tbsp water for top
- sesame seeds for top
- parsley & mozzarella for top
Recipe
In half cup warm water pour 2 tsp yeast with 1 tbsp sugar, mix and cover for 10 minutes.
In a large mixing bowl pour 3 cups all purpose flour. Pour yeast mixture,salt, egg and milk. Mix all the ingredients together until well incorporated.
Pour melted butter and combine the dough. Make a dough ball and place in another bowl lightly greased with oil. Cover the dough for about 2 hours.
Chop vegetables in small cubes. Shred boiled chicken/ rotisserie chicken or turkey.
In a pan on medium heat, pour 1 tbsp oil. Sauté onion for about a minute. Add garlic and cook until light brown.
Add chicken and mix thoroughly.
Add vegetables and spices, stir everything together.
Add 1 tbsp butter in the middle and pour 2 tbsp flour over it. Mix with everything.
Pour cream and mix until well coated with chicken and vegetables. Let it cool down.
Divide the dough into two portions. Roll them into balls. One is for top and one is for bottom.
Roll it until it’s about 10 inches. Place the bottom part in the baking sheet lined with parchment paper.
Spread a thin layer of mayonnaise. Spread the chicken mixture over it. Cover it with shredded mozzarella.
Cover it with the second layer of the bread dough. Using a knife or a pizza cutter, lightly score the dough into 8 slices just make shallow lines to mark the sections.
Apply egg wash. Sprinkle some sesame seeds.
Sprinkle some shredded mozzarella between the slices. Cover the mozzarella with chopped parsley.
Baked @350°F for 20 minutes.
