Chicken Chow Mein

__Ingredients__


Marination

- 1 lb boneless chicken

- 1 tbsp soya sauce

- 2 tsp baking soda

- 1/4 tsp white pepper


Vegetables

- 1 cup carrots

- 5 spring onion

- 1 cup cabbage

- 1 red bell pepper


Sauce

- 2 tbsp oyster sauce

- 1 tbsp dark soya sauce

- 2 tsp rice vinegar

- 2 tsp sugar

- 1 tbsp chili sauce

- 2 tsp sesame oil


Noodles

- 5-6 tbsp cooking oil

- 1 tbsp garlic

- 1 pack chow mein noodles


__Recipe__


  1. Cut chicken into 1-2 inch pieces and put in a deep bowl. Add soya sauce, baking soda and white pepper and marinate for 15-20 minutes.

  2. Cut carrots, cabbage, pepper and green part of spring onion into 2 inch long thin pieces. Chop white part of onion.

  3. Mix all the sauce ingredients into a bowl and keep it for later use.

  4. Boil noodles for 7 minutes or according to package instructions.

  5. Add 5-6 tbsp oil into a hot wok and cook chicken for 5-6 minutes on high heat then take it out. Sauté carrots for about 30 seconds in the same oil and take it out . Sauté cabbage for 10-15 seconds and take it out. Sauté peppers for 10 seconds and take it out.

6. Now add 1 tbsp crushed garlic into the same wok. Add boiled noodles into the garlic and stir well.

7. Make a well in the middle of the noodles and add white part of spring onion. Sauté with noodles for few seconds. Add sauce And mix. Add chicken and stir for about a minute. Add all the vegetables and mix.
