Chocolate Chip Brownie Cookies

Ingredients


- 3 cups all-purpose flour = 360 grams

- 300g chocolate

- 1/2 cup cocoa powder = 40 grams

- 1/3 cup all-purpose flour = 40 grams

- 1 cup butter = 226 grams

- 1/2 cup sugar = 100 grams

- 1 cup brown sugar = 200 grams

- 2 tablespoons cornstarch = 15 grams

- 2 teaspoons vanilla extract

- 1 teaspoon baking soda = 6g

- 2 teaspoons baking powder = 10g

- 1/2 teaspoon salt



Recipe


  1. Beat slightly cold butter for about a minute.

  2. Add sugars and mix until combined.

  3. Add eggs and vanilla extract and mix well.

  4. Add dry ingredients and mix until well incorporated.

  5. Divide the dough into two equal portions.

  6. Each portion weighs about 530g.

  7. Add 40g cocoa powder in first portion and 40g flour in second portion.

  8. Chop 300g chocolate bar or you can use chocolate chips. Mix 150g chocolate in each portion.

  9. Scoop out each dough into 12 equal portions. 60g each.

  10. Divide each portion into small pieces and combine them together into one ball. Each dough ball weighs 120g at this point.

  11. Press the dough with your hand and top it with more chocolate.

  12. Place 6 cookies on each baking sheet lined with parchment paper or silicone mat.

  13. Bake @375°F for 13-14 minutes.

  14. Let the cookies set for 15 minutes in the baking dish then cool completely on a wire rack.
