Levain Bakery’s Copycat Chocolate Chip Cookies In Three Flavours

__Red Velvet Ingredients__


- 1/2 cup cold butter (113g)

- 1/4 cup granulated sugar (54g)

- 1/2 cup brown sugar (90g)

- 1 tsp vanilla extract (4g)

- 1 egg (70g)

- 1/2 tsp salt (3g)

- 1 1/2 cup all purpose flour (180g)

- 1/2 cup cake flour (64g)

- 2 1/2 tbsp cocoa powder (20g)

- 1 1/2 tsp baking powder (8g)

- 1/2 tsp baking soda (3g)

- 1 tsp cornstarch (10g)

- 1 tsp red food colour (4g)

- 1/2 cup semisweet chocolate chips (100g)

- 1 cup white chocolate chips (200g)



__Chocolate Chip Walnut __


- 1/2 cup cold butter

- 1/4 cup granulated sugar

- 1/2 cup brown sugar

- 1 tsp vanilla extract

- 1 egg

- 1/2 tsp salt

- 1 1/2 cup all purpose flour

- 1/2 cup cake flour

- 1 1/2 tsp baking powder

- 1/2 tsp baking soda

- 1 tsp cornstarch

- 1 cup roasted walnuts

- 1 cup semisweet chocolate chips



__Double Chocolate Chip Cookies __


- 1/2 cup cold butter

- 1/4 cup granulated sugar

- 1/2 cup brown sugar

- 1 tsp vanilla extract

- 1 egg

- 1/2 tsp salt

- 1/4 cup cocoa powder

- 1 1/4 cup all purpose flour (156g)

- 1/2 cup cake flour

- 1 1/2 tsp baking powder

- 1/2 tsp baking soda

- 1 tsp cornstarch

- 1 cup dark chocolate chips



__Recipe__


1. Mix butter and sugar together until creamy.

2. Add egg and vanilla extract, mix until well combined.

3. Add all purpose flour, cake and pastry flour, cornstarch, baking powder, baking soda and salt. Mix until well combined.

4. Add chocolate and mix with spatula.

5. Divide the dough into 6 equal parts.

6. Roughly roll and press the cookies a little bit.

7. Freeze for 10 minutes before baking.

8. Bake @400°F for about 10-12 minutes.

9. Let them set on the baking tray.

10. Cooldown on the rack for at least 10 minutes.

Note: All the procedures are the same except the couple of the ingredients.
