Ingredients
100g unsalted butter (1/2 cup)
100g unsweetened peanut butter (1/2 cup)
90g brown sugar (1/2 cup)
54g caster sugar (1/4 cup)
2 eggs
1 tsp vanilla extract
250g all purpose flour (2 cups)
20g cornstarch (2 tbsp)
8g baking powder (1.5 tsp)
3g baking soda (1/2 tsp)
3g salt (1/2 tsp)
100g Reese’s mini cups (3/4 cup)
100g chocolate chips (3/4 cup)
Toppings
100g chocolate chips (3/4 cup)
20g butter ( 1.5 tbsp)
Reese’s cups ( 6 large)
Recipe
Cut cold butter into cubes and pour into a large mixing bowl. Add cold peanut butter and mix until well combined.
Add sugars and mix until well blended.
Add vanilla extract and eggs. Beat for about 2-3 minutes.
Add flour, baking soda, baking powder and salt. Mix until well incorporated and you get a smooth dough.
Freeze 100g chopped Reese’s cups for about 30 minutes and pour into the cookie dough.
Pour 100g semisweet chocolate chips and mix with a spatula.
Scoop out the cookie dough into 6 large portions.
Each portion weighs about 5.60 oz at this point.
Roll each potion into a large ball.
Freeze dough balls for 15 minutes before baking.
Bake @375°f for 14-15 minutes.
Let them set in the baking sheet for 20-30 minutes.
Then cool down completely on a wire rack.
Microwave 100g chocolate chips for about 30 seconds then stir well. Add 20g butter and microwave again for about 30 seconds. Mix until smooth.
Spread chocolate on top of the cookies. Decorate with Reese’s chocolate cups.
Each cookie weighs about 7oz.
