Chocolate Cupcakes With Cheesecake Filling & Frosting




__Ingredients For Cupcakes__


- 1/3 cup oil

- 1 cup sugar

- 1 large egg

- 1 cup milk

- 1 tbsp vinegar

- 2 tsp vanilla extract

- 1 & 1/2 cup all purpose flour

- 1/3 cup cocoa powder

- 1 tsp baking soda

- 1/2 tsp salt

- berries & chocolate for topping


__Ingredients for Cheesecake__


- 200g cream cheese

- 1/2 tsp vanilla extract

- 1 large egg

- 3/4 cup icing sugar

- 2 tbsp cocoa powder


__Ingredients for Cream Cheese Frosting__


- 220g cream cheese

- 1/2 cup butter

- 1 tsp vanilla extract

- 4 cups icing sugar


__Recipe__


1. Pour 1/3 cup oil in a bowl with 1 cup sugar. Whisk for about 1 minute. Add 1 large egg and beat until incorporated.

2. Pour milk with vinegar and vanilla extract and whisk for few seconds.

3. Sift flour, cocoa powder, salt and baking soda and whisk just until the ingredients come together and no dry streaks remain.

4. Scrape the bottom and sides of the bowl with spatula and mix until batter gets light and fluffy.

5. Cheesecake Batter: whisk cream cheese until smooth. Add vanilla extract, egg, icing sugar and cocoa powder. Mix until well combined, don’t over mix.

6. Line a 12-cup muffin tray with paper liners and spray lightly with cooking spray.

7. Fill each muffin cup half full with the cupcake batter. Spoon a tablespoon of the cream cheese filling over the batter and spoon the remaining batter over the cream cheese filling.

8. Bake @350°F for 18-20 minutes. Let them sit in the baking tray for 10 minutes then transfer to a wire rack to cool them completely.

9. Frosting : Whisk cream cheese with butter and vanilla extract until softened for about 2-3 minutes. 10. Gradually add icing sugar and whisk until completely combined.

11. Fill your piping bag with frosting and apply on cool cupcakes. Decorate with blueberries, blackberries and chocolate.
