Chocolate Peanut Butter Pie Cookies | Crumbl Cookies Copycat Recipe

A cookies & cream pie cookie topped with a peanut butter pie filling, a drizzle of melted chocolate, and chopped Reese’s peanut butter cups.



Ingredients


- 1/2 cup softened butter (113g)

- 1/2 cup brown sugar (100g)

- 1/3 cup granulated sugar (75g)

- 2 tsp vanilla extract

- 1 large egg

- 1 & 1/4 cup all purpose flour (150g)

- 1/2 cup black cocoa powder (50g)

- 1/2 cup crushed Oreo cookies (50g)

- 1/4 tsp salt

- 1/2 tsp baking powder

- 1/2 tsp baking soda

- 1 tbsp cornstarch

- 1/4 cup cream cheese (30g)

- 1/2 cup smooth peanut butter (90g)

- 1/2 cup powdered sugar (65g)

- 1/4 cup whipping cream (60g)

- Reese’s cups and chocolate for topping


Recipe


  1. Beat butter for about a minute then add sugars and beat for about a minute or until well combined.

  2. Add vanilla extract and egg. Beat until well blended.

  3. Add all the dry ingredients into the wet and mix well until you get a smooth cookie dough.

  4. Refrigerate for about an hour.

  5. Divide the dough into 12 equal portions.

  6. Roll each portion into a dough ball.

  7. If you are using molds, grease them or use parchment paper on your baking sheet. Press the dough balls into the molds.

  8. Bake @350°F for 10 minutes.

  9. Let the cookies sit in the molds/ sheet for 10 minutes then cool completely on a wire rack.

  10. Mix all the peanut butter pie ingredients together and refrigerate for 15 minutes.

  11. Top the cooled cookies with a scoop of pie filling. Spread with a spatula.

  12. Drizzle some melted chocolate and sprinkle some chopped Reese’s cups.
