Crispy & Flaky Pastry Shell Samosa



__Ingredients__


__First Dough__


- 300g all purpose flour (2.4 cups)

- 1 tsp salt

- 1 tbsp sugar

- 110ml water (1/2 cup)

- 75ml oil (1/3 cup)


__Second Dough__


-130g all purpose flour (1 cup)

- 80g salted butter (1/3 cup)


__Filling__


- 2 large potatoes

- 1 tsp salt

- 1 tsp red chilli flakes or powder

- 1 tsp ground coriander

- 1 tsp ground cumin

- 1/3 cup chopped cilantro

-1 green chilli

Recipe__


1. Mix the ingredients of first dough and knead for five minutes until it gets a form of dough. Roll it into a ball and cover for 30 minutes.

2. Mix the ingredients of second dough. Knead for 2 minutes and roll the dough into a ball. Cover and leave for 30 minutes.

3. Peel and cut 2 large sized potatoes. Boil for 10 minutes until softened.

4. Mash with a fork. Keep it chunky. Mix the ingredients and keep it a side.

5. Remove the wrap from the first dough. Roll the dough and divide into 10 equal parts. Roll all 10 pieces into balls and cover with a napkin.

6. Remove the wrap from the second dough and divide into 10 equal parts. Roll all the pieces into balls and cover with a napkin.

7. Now take a big ball from the first dough and take a small ball from the second dough.

8. Spread the first dough ball with your fingers and put the second ball inside it. Seal the edges and roll it into a ball. Make all the dough balls like that. Now you have 10 big balls.

9. Cover all the balls with a napkin and take one ball for rolling.

10. Roll it with a rolling pin up to 12” long. Roll the long dough from one edge to the other. Roll With the rolling pin again up to 12” long and roll from the one edge to other. Divide it into 2 parts. Each dough makes 2 samosas.

It sounds complicated but actually it’s easy all you need to do is rolling. Please watch the video for batter understanding.

11. Roll all the dough balls like that. Now we have 20 rolled dough pieces.

12. Take 1 piece, roll 4” big.

13. Mix the potato ingredients. Take 2 spoons of the mixture and put in the 4” rolled dough. Give it a shape and seal the edges with a fork. You can freeze these samosas before frying for later use.

14. Fry samosas into deep fried oil for 5-6 minutes on medium heat.
