Crumbl Copycat Red Velvet Cupcake Cookies With Cream Cheese Frosting

Soft and moist Crumbl inspired Red Velvet Cookies, topped with a swirl of cream cheese frosting and adorned with red velvet crumbs.


__Ingredients For Cookies__


- 1/2 cup softened butter (113g)

- 1/3 cup granulated sugar (65g)

- 1/4 cup brown sugar (45g)

- 1 egg

- 1 tsp vanilla extract

- 1 1/3 cup all purpose flour (160g)

- 3 tbsp cocoa powder (21g)

- 1/2 tsp baking soda

- 1/2 tsp baking powder

- 1/4 tsp salt

- 1-2 tsp red food colour

- 1 tsp vinegar


__Frosting__


- 1/3 cup cold butter (75g)

- 3/4 cup cream cheese (170g)

- 1/2 tsp vanilla extract

- 1/4 tsp salt

- 1 1/2 cups icing sugar ( 190g)


Recipe

  1. Beat butter and sugars until well combined.

  2. Add egg and vanilla extract and mix well.

  3. Add flour, cocoa powder, baking soda, baking powder, salt, vinegar and red food colour. Mix until well incorporated.

  4. Cover and refrigerate the dough about an hour.

  5. Divide the dough into 6 portions. Each portion weighs 82-84g.

  6. Roll the dough into balls and gently press the top.

  7. Bake @375°F for 10 minutes.

  8. Let them sit in the baking pan for about 15 minutes.

  9. Transfer to a wire rack to cool completely.

  10. Cream Cheese Frosting: Beat cold butter for about a minute. Then add cream cheese and beat for another minute. Add salt, vanilla extract and icing sugar gradually and mix until smooth.

  11. Pipe the icing onto the cooled cookies in a circular motion.

  12. I’m breaking one cookie and using a quarter for crumb topping.
