__Ingredients__
- 500g beef
- 1 medium sized onion
- 2 tbsp yogurt
- 2 tbsp milk
- 1 tsp paprika
- 1 tsp thyme
- 1 tsp oregano
- 1 tsp black pepper
- 2 tsp salt
- 2-3 tbsp oil for frying
__Pita Bread Dough__
- 1/3 cup milk
- 1/3 cup water
- 1 tbsp yeast
- 2 tsp sugar
- 3 cups flour
- 1 tsp salt
- 3 tbsp oil
- 3 tbsp yogurt
__Sauce__
- 1/2 cup yogurt
- 1/3 cup mayonnaise
- 1 tsp dried mint
- 1 tsp dried oregano
- 1/2 tsp salt
- 1 tsp black pepper
- 2 tsp vinegar
__Salad__
- 1 onion
- 1/2 cup parsley
- 1/4 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp paprika
- 1 tsp sumac
__Recipe__
1. Take 500g ground beef in a bowl. Add chopped onion with spices, yogurt and milk. Mix and put the mixture into a food processor to make a smooth paste.
2. Place the meat on a parchment paper and wrap into a roll. Twist both edges tightly and seal the edges with clips. Freeze until freezes completely.
3. In 1/3 cup warm milk, add 1/3 cup warm water. Add 1 tbsp yeast with 2 tsp sugar. Mix and cover for 5 minutes.
4. Take 3 cups all purpose flour in deep bowl. Add yeast mixture with yogurt and oil. Mix and knead the dough until smooth.
5. Cover the dough for 1-2 hours until doubled.
6. Remove the wrap from the dough and punch it down. Sprinkle some flour on the work surface and roll the dough in it.
7. Divide the dough into 12 pieces. Roll each piece into a ball. Cover all the dough balls with a napkin. And roll each ball into a 5-6 inch sized pita bread.
8. Place pitas on a baking tray aligned with parchment paper. Cover for 15-20 minutes with a napkin. Remove the napkin and bake @400°F for 6 minutes and then broil for another 2 minutes without taking it off.
9. Take out the meat from freezer when it gets firm. Remove the parchment paper and slice the meat into thin slices with a sharp knife.
10. Heat up 2-3 tbsp oil in a frying pan and fry the meat pieces on medium high heat. Cook from both sides in 3-4 minutes each side.
11. Sauce: Mix yogurt and mayo. Add vinegar, paprika, salt, pepper, dried mint and oregano. Mix and keep it in the fridge.
12. Salad: Slice onion and chop parsley. Add salt, pepper, paprika, and sumac.
13. Cut the pita bread from the middle and spread some sauce inside it add meat, salad, sliced tomatoes & some pickles. Garnish with some lettuce. Enjoy!
