—Ingredients—
- 2 cups dried chickpeas (Do NOT use canned or cooked chickpeas)
- ½ tsp baking soda
- 1 cup fresh parsley leaves, stems removed
- 1 cup fresh cilantro leaves
- 1 medium onion
- 5-6 garlic cloves
- 2 tsp Salt
- 1 tbsp ground black pepper
- 1 tbsp ground cumin
- 1 tbsp ground coriander
- 1 tsp cayenne pepper, optional
- 1 tsp baking powder
- 2 tbsp toasted sesame seeds
- Oil for frying
__Tahini Sauce__
- 2-3 garlic cloves
- 1/2 tsp salt
- 1 cup tahini paste
- 1/4 cup freshly squeezed lemon juice
- 1/4 cup cold water
- 1/2 cup fresh chopped parsley leaves (optional)
__Tabouli Salad __
- 1 bunch curly parsley
- 1 small cucumber
- 1 tomato
- 2 spring onion (green parts only)
- 2 tbsp lemon juice
- 1 tbsp olive oil
- 1/2 tsp salt
- 1/2 tsp ground black pepper
- 1 tbsp bulgur
__Recipe__
1. Place the dried chickpeas and baking soda in a large bowl filled with water to cover the chickpeas by at least 2 inches. Soak overnight or at least 6 hours. When ready, drain the chickpeas completely.
2. Add the chickpeas, onion and garlic to the large bowl of a food processor and mix for 2 minutes. Add herbs,spices and baking powder mix until smooth. Mix roasted sesame seeds.
3. Transfer the falafel mixture to a bowl for 1/2 an hour.
4. Scoop the falafel mixture with a cookie scoop (I used 1 & 1/2 inch) and form into patties. It helps to have wet hands as you form the patties.
4. Heat the oil on medium heat. Carefully drop the falafel patties in the oil, let them fry for about 3 to 4 minutes then flip the sides. Fry until golden brown.
5. Tahini Sauce: Blend the ingredients of the tahini sauce into smooth.
6. Tabouli Salad : Pour lemon juice in a bowl and add olive oil with salt, pepper and bulgur. Mix everything and keep it aside.
7. Chop the vegetables into small chunks. Don’t use food processor, it will ruin the texture.
8. Pour the bulgur dressing and mix it very well.
Enjoy the falafel with tahini sauce, tabouli salad and warm Lebanese bread.
