General Tso’s Chicken With Garlic Fried Rice

__Ingredients For Garlic Fried Rice__


- 5 cups boiled rice

- 4 tbsp oil

- 8 garlic cloves

- 1/2 tsp salt

- 1 tsp black pepper

- 2 tbsp soya sauce

- 2 tbsp oyster sauce

- 1 tsp sesame seeds oil

- 1 cup chopped peppers (red & yellow)

- 1/4 cup chopped spring onions


__Ingredients for Tso’s Chicken__


- 2lb chicken thighs

- 1/2 tsp salt

- 1 tsp black pepper

- 2 tbsp rice vinegar

- 2 egg whites

- 1/2 tsp baking soda

- 1/2 cup all purpose flour

- 1/2 cup cornstarch

- 2 tbsp water

- 2 tbsp oil

- 1 tbsp chopped garlic

- 1 tbsp chopped ginger

- 3 tbsp oil

- 8-10 dried red chilies

- sesame seeds and spring onions for top


__Ingredients for Tso’s sauce __


- 1 cup chicken stock

- 2 tbsp light soya sauce

- 2 tbsp dark soya sauce

- 2 tbsp hoisin sauce

- 5 tbsp sugar

- 2 tbsp rice vinegar

- 3 tbsp cornstarch


__Recipe__


1. Pour 4 tbsp oil in a wok. Add 7-8 chopped garlic cloves. Fry until golden. Add 1 cup chopped bell peppers with 1/4 cup spring onions. Add 2 tbsp soya sauce with 2 tbsp oyster sauce and sauté for about 2 minutes. Add 1/2 tsp salt with 1 tsp black pepper & 1 tsp sesame oil. Then add 5 cups boiled rice and mix thoroughly.


2. Cut chicken thighs into cubes. Add 1/2 tsp salt, 1 tsp black pepper and 2 tbsp rice vinegar. Mix well.

3. Add 2 egg whites 1/2 tsp baking soda, 1/2 cup all purpose flour with 1/2 cup cornstarch. Mix until well coated. It will be dry and sticky at this point.

3. Add two tbsp water with two tbsp oil in the mixture to make it smooth. Cover for half an hour.

4. Mix the ingredients for sauce and keep it aside for later use.

5. Heat up oil at 320°F and fry the chicken for 2 minutes. Flip the sides and fry for another 2 minutes. Take it off in 4-5 minutes. Let it cool down a little bit. Then fry it for second time until golden brown. Chicken will be crispy at this point.

6. Heat up 3 tbsp oil in a wok and sauté 1 tbsp garlic with 1 tbsp ginger. Add dried red chilies and sauté for 2-3 minutes. Then add prepared sauce and cook until thickened. Add fry chicken and toss the chicken until coated with the sauce.

7. Sprinkle some sesame seeds and spring onions. Enjoy with delicious garlic rice.
