Holiday Special Chocolate & Coffee Cake

__Ingredients__


- 1 & 1/2 cup sugar (300g)

- 1/2 cup oil (100g)

- 1/2 cup butter (115g)

- 1 tsp vanilla extract (4g)

- 2 cups all purpose flour (240g)

- 1 tsp baking powder (5g)

- 1/2 tsp baking soda (3g)

- 1/2 tsp salt (4g)

- 1 cup milk (240g)

- 2 tsp vinegar (10g)

- 2 eggs (105g)

- 1/4 cup coca powder (25g)

- 1 tbsp coffee (6g)


__Recipe__


  1. Pour all purpose flour in a bowl. Add baking powder, baking soda and salt. Mix and keep the bowl aside for later use.

  2. Take another bowl and add sugar, oil and melted butter. Mix until well blended .

  3. Add eggs with vanilla extract and beat with an electric mixer for about 2 minute.

  4. Pour milk and vinegar together and mix well.

  5. Mix the dry ingredients into the wet ingredients and mix until well combined.

  6. Pour the batter into three separate bowls. Make two bowls with the same amount of batter and make the third portion double than the other two. We are going to use the big portion as a base of the cake. (Please watch the video for details)

  7. Now leave one portion as it is and mix 1 tbsp instant coffee to the second portion.

  8. Add cocoa powder in the third portion (bigger one) and mix until combined.

  9. Pour the batter into piping bags.

  10. Grease your baking pan and align it with parchment paper. Pipe the chocolate cake batter in the bottom of the pan and start making patterns with all three flavours. (Please watch the video for details)

  11. Bake the cake @350°f for 45-50 minutes. Let it set in the pan fore 10 minutes after baking.

NOTE: Mix 1 tbsp hot water in 1 tbsp instant coffee and mix the coffee paste into the batter, that would be easier to mix). I forgot to do that 🤦🏻‍♀️.
