Italian Pizza Neapolitan In Home Oven


__Ingredients__


- 500g water

- 850g “00” flour (pizza flour)

- 4g active dry yeast

- 15g sea salt

- semolina and flour for dusting

- oregano and fresh basil leaves for flavour and garnishing

- Fresh mozzarella block


__Sauce__


- 28oz San Marzano tomatoes

- 2 tbsp olive oil

- 1 tsp oregano

- 1 & 1/2 tsp salt

- 1/2 tsp black pepper

- 3-4 garlic cloves


__Recipe__


1. In 500g lukewarm water add yeast with 50g “00” flour. Add salt and mix thoroughly. Then add 800g flour and mix until well combined.

2. Put the dough at work surface and knead for 10 minutes.

3. Grease a deep bowl with olive oil and roll the dough in it. Keep the dough at room temperature for one hour then refrigerate overnight.

4. Remove the wrap and punch it down. Spread some flour at your work surface and roll the dough in it.

5. Divide the dough into equal parts. Each part should be around 250g. Recipe makes 5 pizzas.

6. Roll the edges underneath to make smooth dough balls. Spread semolina in a dish and arrange dough balls in it. Cover the dough for 2-3 hours.

4. Drain water from one can ,28oz of San Marzano Tomatoes. Add olive oil, salt, black pepper, oregano and garlic cloves. Blend to make a smooth purée.

5. Remove the cover from the dough and roll the dough into flour. Spread it with your fingers. Flip the side and spread it. Lift the dough up on the back of your hands. Use knuckles to stretch the dough.

6. Spread 2-3 tbsp of pizza sauce evenly. Garnish with fresh basil leaves, oregano, freshly sliced mozzarella and drizzle some olive oil.

Bake @525°F preheated oven for 8-10 minutes on the lowest rack.
