Yogurt Soufflé Cake

__Ingredients__


- 3 eggs

- 1 cup yogurt

- 1/3 cup sugar

- 1/4 cup cake & pastry flour

- 10 grams cornstarch (1 1/4 tbsp)

- salt a pinch

- 1+ 1/2 tsp lemon juice

- 1 tsp vanilla extract


__Recipe__


1. Beat egg yolks with yogurt until well blended.

2. Add 1 tsp lemon juice, 1 tsp vanilla, a pinch of salt, flour and cornstarch. Mix everything until well combined.

3. In another bowl beat egg whites until fluffy.

4. Add 1/2 tsp lemon juice and 1/3 cup sugar in batches. Keep mixing until foamy.

5. Mix egg whites into egg yolks mixture in batches.

6. Put parchment paper in 6” cake pan. Pour cake batter and tap gently.

7. Pour hot water into a bigger pan for water bath and put the cake pan inside the bigger pan.

8. Bake at 300°F for 20 minutes. Then reduce the heat to 285°F and bake for another 40 minutes.
