__Ingredients__
__Marination__
- 800g chicken thighs
- 2 tsp vinegar
- 1 tsp garlic powder
- 1 tsp ginger powder
- 2 tsp salt
- 2 tsp red chilli powder
- 1/2 tsp black pepper
- 1/2 tsp white pepper
- 1 tbsp mustard
__Coating__
__1st Coating__
- 1/2 cup all purpose flour
- 1/3 cup cornstarch
- 1 tsp red chilli powder
- 1 tsp salt
- 1 tsp baking powder
- 1/2 tsp black pepper
- 1 cup milk + 1 tsp vinegar
- 1 egg
__2nd Coating __
- 1 cup all purpose flour
- 1 cup cornstarch
__Recipe__
1. Cut the chicken into bite sized pieces. In a bowl add vinegar, salt, chilli, pepper and mustard. Mix until well blended. Add chicken and mix it well. Cover the chicken with a cling wrap for 20 minutes.
2. In 2nd bowl mix the ingredients of 1st coating (liquid) and leave it for later use.
3. In 3rd bowl mix the 2nd coating (dry) and leave it for later use.
4. Now remove the cling wrap from chicken and take 3-4 pieces at a time and dip into the 1st coating with one hand.
5. Then put the chicken into the dry coating and coat flour with other hand.
6. Coat 10-12 pieces and deep fry into the hot oil at medium heat. Don’t touch the chicken before 3-4 minutes.
7. Flip sides in 4 minutes. Then fry for another 2 minutes. It takes only 6 minutes to fry perfectly. Fry chicken into batches.
