Biscoff Cheesecake Bars
__Ingredients__
- 250g Lotus Biscoff cookies (1 pack)
- 60g butter
- 500g cream cheese
- 200ml heavy cream
- 40g icing sugar
- 1 tsp vanilla extract
- 400g Lotus Biscoff butter
__Recipe__
1. Take 1 pack of Biscoff cookies and crush them into fine crumbs. Put all the cookies in a freezer bag and crush them with a rolling pin or crush them into a food processor.
2. Pour the crumbs into a bowl and add melted butter. Mix until incorporated.
3. Align baking ring with parchment paper. I’m using 8x8.
4. Pour cookie crumbs and save 1 tbsp for the topping. Press the cookie crumbs evenly to make crust. Freeze it for about 20 minutes.
5. Pour 500g softened cream cheese in a large bowl. Whisk for about 1 minute. Add icing sugar, vanilla extract and 180g Biscoff butter. Beat until well combined for about 2 minutes.
6. Pour whipping cream and beat for about 2 minutes. Make sure that your cream cheese blends in smoothly with the rest of your ingredients.
7. Pour the cheesecake batter on cold crust and refrigerate overnight or at least 4 hours.
8. Microwave the rest of your Biscoff butter for about 30 seconds and pour all over the cheesecake. Spread it evenly and save 1 tbsp for the topping. Refrigerate for about 30 minutes.
9. Take Your cheesecake out from the ring and remove the parchment paper.
10. Trim the edges with a clean knife and wipe the knife with a warm napkin after each trimming.
11. Cut into 6-8 bars and drizzle a little bit of Biscoff butter over the bars. Sprinkle cookie crumbs on the top and enjoy!
