Middle Eastern Meat & Cheese Pies

__Ingredients__


- 1 cup water

- 2 tsp yeast

- 2 tsp sugar

- 3 cups flour

- 1 tsp salt

- 3 tbsp yogurt

- 2 tbsp olive oil + 1 tsp

- 1 onion

- 1/2 green bell pepper

- 1/2 red sweet pepper

- 1 green chilli pepper

- 1 tomato

- 1/2 cup parsley

- 600 grams ground beef

- 3 tbsp tomato paste

- 3 tbsp olive oil

- 2 tsp salt

- 1 tsp crushed red chilli or black pepper

- 1 tsp sumac

- 1 tsp ground cumin

- 1 tsp garlic paste

- 1 cup mozzarella cheese

- 1 cup halloumi cheese

- 1 egg

- 2 tbsp butter

- flour for dusting


__Recipe__


1. In one cup warm water, add yeast with sugar. Stir and cover it for 10 minutes.

2. Add flour with salt, yogurt and olive oil. Mix everything until well combined. Cover it with cling wrap for 1 hour.

4. Remove the seeds from peppers & peel off tomato skin. Chop the vegetables in food processor or chop it into small chunks with a sharp knife. Add vegetables into meat. Add all the spices, tomato paste, garlic and olive oil. Mix until well combined.

4. Remove the wrap from dough and punch it down . Put some flour on your work surface. Roll the dough in it and divide it into 6-8 pieces.

5. Roll each part into a ball. Roll one ball with rolling pin and cover the rest of the dough with a napkin for later use.

6. Spread the thin layer of meat at the dough. And roll the edges of the dough. Press it down and seal the corners.

7. Apply beaten egg at the edges. Place the meat pies on your baking dish aligned with parchment paper. Bake @525°F for about 10-12 minutes. Apply butter at the edges. If you want the top a little more brown, broil it for 1-2 minutes.

8. Roll the dough and spread the mixture of mozzarella and halloumi cheese at the dough. Top it with pepperoni. You can use your favourite cheese and toppings like feta cheese with spinach or mushrooms, olives etc.
