__Ingredients__
- 2 egg whites
- 1/2 cup icing sugar
- 2 cups sliced almonds
- 1 cup sugar
- 1/2 cup water
- 1 tsp lemon juice
- 1 tsp corn syrup or honey
- 1 tsp rose water or orange blossom
- 1 cup chocolate chips
- 2 tsp oil
- 1 cup nuts of your choice
__Recipe__
1. Whisk egg whites with icing sugar until fully incorporated.
2. Add sliced almonds and gently mix with a rubber spatula.
3. Grease (24 count) mini cupcakes baking mould.
4. Fill the mould equally with the almonds.
5. Give these a shape of cups with your finger and bake @300°F for about 7-8 minutes.
6. Let it set for 10-15 minutes after baking then with a knife release the edges and take the almond cups out.
7. SYRUP: Pour sugar and water in a pan on medium heat. Add lemon juice and stir occasionally while cooking. Add corn syrup and stir. Turn the heat off when it thickens and add rose water.
8. CHOCOLATE FILLING: Take 1 cup chocolate chips and add 2 tsp oil. Microwave for 30-40 seconds. Mix until smooth.
9. Pour the melted chocolate in a piping bag. Fill the almonds cups with the chocolate and let it set for 10-15 minutes.
10. Pour 1-2 tbsp syrup on nuts individually and mix until fully coated. Spread these nuts on parchment paper until set.
11. Decor the chocolate almond cups with nuts.
