Moist Fruit Cake

Ingredients


- 1 cup melted butter

- 1 cup sugar

- 4 eggs

- 1/2 tsp salt

- 1 tsp vanilla extract

- 1/2 tsp almond extract

- 2 tsp lemon juice

- 2 cups all purpose flour

- 2 tsp baking powder

- 1/2 cup milk

- 1 cup dried fruits and nuts + more for topping



Recipe


  1. Pour melt butter and sugar in a dept bowl. Beat with an electric mixer or hand whisk until combined.

  2. Add eggs, vanilla extract and almond extract. Beat the eggs until light and fluffy.

  3. Add flour, baking powder and salt. Mix until well combined. Scrape the bowl with spatula.

  4. Add milk and lemon juice and mix until you get a smooth cake batter.

  5. Pour 1 cup chopped dried fruit and nuts of your choice. Mix with a spatula.

  6. Pour the cake batter into a loaf pan aligned with parchment paper.

  7. Flatten the top with spatula and spread some fruits at the top of the cake.

  8. Bake @350f for 30 minutes then reduce the heat to 325°F and bake for another 30 minutes.

  9. Leave the cake inside the pan for 10 minutes after baking. Then take the cake out of the pan and remove the parchment paper.

  10. Wrap the cake with a plastic wrap for 30-40 minutes. Then slice the cake with a sharp knife. Enjoy!
