__Ingredients__
- 15 digestive biscuits
- 1/4 cup sugar
- 1/4 tsp salt
- 1/4 cup melted butter
- 750g cream cheese
- 1 cup sour cream
- 3 eggs + 2 egg yolks
- 1 cup sugar
- 1 tsp vanilla extract
- 1/2 cup heavy cream
- 3 tbsp all purpose flour
__Strawberry Topping __
- 2 lb strawberries
- 1/3 cup sugar
- 2/3 cup water
- 2 tsp cornstarch
- 1 tsp vanilla extract
__Recipe__
1. In a food processor, pulse 15 digestive biscuits with 1/4 tsp salt and 1/4 cup sugar. Pulse until fully incorporated.
2. Add 1/4 cup melted butter. Mix until well combined.
3. Grease 9” springform pan. Align it with parchment paper and grease again. Spread the crumbs and press evenly into the bottom of the pan.
4. Bake it @325°F for 7-8 minutes. Let it cool down.
5. Beat 750g cream cheese at room temperature for 1 minute. Add 1 cup sour cream at room temperature and mix until well blended. Scrape the bowl with a spatula.
6. Add 1 cup sugar with 1 tsp vanilla extract and beat until light and smooth. Scrape the sides and the bottom of the pan.
7. Add eggs and mix everything until well combined.
8. Add flour and mix everything together.
9. Grease the sides of the pan and align it with parchment paper. Grease again. This will prevent your cake from cracking.
10. Pour the batter on top of the crust. Break the bubbles with skewers and tap the pan.
11. Crisscross 3 long pieces of aluminum foil. Place springform in centre of foil and wrap foil tightly around bottom and sides of pan.
12. Pour boiling water into roasting pan to come halfway up the sides of the springform pan.
13. Bake @325°F for 1 hour and 15 minutes then turn the heat off and let it sit inside the oven for 45 minutes.
14. Take the pan out from the water bath and let it cool down for half an hour then refrigerate it for 6-8 hours.
15. Remove the outer ring and parchment paper.
16. Strawberry Topping: wash and cut 1lb strawberries. Put strawberries in a pan, add sugar and water. Bring the mixture to a boil. Use an electric beater or potato masher to mash the strawberries. Add 2 tsp cornstarch and stir frequently. Cook for 10 minutes and turn off the heat. Mix 1 tsp vanilla extract. Strain the sauce and pour onto the cake while it’s cool. Spread all over the cake and drip the sauce with a spatula.
17. Top it with remaining fresh strawberries. Clean a sharp knife with warm and moist napkin. Cut the slice and clean it again. Lift and transfer the slice carefully into a plate.
