NY Style Gourmet Cookies

Ingredients For Cookie Dough


- 1/2 cup butter (113g)

- 1/4 cup granulated sugar (54g)

- 1/2 cup brown sugar (90g)

- 1 egg

- 2 tsp vanilla extract

- 1 & 1/2 cup all purpose flour (180g)

- 1/2 cup cake flour (64g)

- 1 tbsp cornstarch (10g)

- 1/2 tsp baking soda (3g)

- 1 & 1/2 tsp baking powder (8g)

- 1/2 tsp salt (3g)


Various Flavours


Funfetti Cookies

1/4 cup funfetti (45g)


Chocolate Chip Walnut Cookies

2 tbsp chopped walnuts (15g)

2 tbsp chocolate chips (20g)


Red Velvet Chocolate Chip Cookies

1 tsp cocoa powder (2.6g)

4-5 drops red food colour

2 tbsp white chocolate chips (20g)

2 tbsp semi sweet chocolate chips (20g)


Double Chocolate Chip Cookies

2 tbsp cocoa powder (15g)

1 tsp melted butter (5g)

2 tbsp milk chocolate chips (20g)

2 tbsp semi sweet chocolate chips (20g)





Recipe


  1. Cut cold butter into cubes and pour into the deep bowl. Beat with an electric mixer for a few seconds.

  2. Add sugars and beat until combined.

  3. Add egg with vanilla extract and mix for about a minute.

  4. Add all purpose flour, cake flour, baking powder, baking soda, salt and cornstarch. Mix until well incorporated. Scrape the bottom and sides of the bowl.

  5. Divide the dough into four equal portions.

  6. Mix each flavour into the each dough portion and freeze for five minutes.

  7. Align your baking sheets with parchment paper.

  8. Scoop the dough with one inch cookie scoop. You can get 8 cookies from each flavour. Roll the dough into balls.

  9. Freeze the dough balls for five minutes and bake @375°f for 5 minutes.

  10. Let the cookies set in the baking sheet then transfer to a wire rack to cool completely.
