Pink Velvet Cake Cookies With Cream Cheese Frosting

These Crumbl Pink Velvet Cookies are made with a cake batter extract, pink food coloring and a delicious cream cheese frosting.



Ingredients


  • 1/2 cup 115g butter (softened)

  • 1/2 cup 100g sugar

  • 1 large egg

  • 1 tsp cake batter extract/ vanilla extract

  • 1 1/2 cups 180g flour

  • 1 tbsp 10g cornstarch

  • 1/2 tsp 2g baking powder

  • 1/2 tsp 2g baking soda

  • 1/4 tsp 1g salt

  • A few drops of pink food coloring


Cream Cheese Frosting



  • 1/3 cup 75g cream cheese (softened)

  • 1 tbsp 17g butter (softened)

  • A pinch of salt

  • 1/2 tsp vanilla extract

  • 125g icing sugar


Instructions


1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

2. In a large bowl, cream together the butter and sugar until light and fluffy. Add the egg and vanilla extract, mixing well.

3. Add flour, cornstarch, baking powder, baking soda, and salt. Mix until just combined.

5. Scoop the dough onto the prepared baking sheet, spacing them about 2 inches apart. Slightly flatten the tops of each cookie with your hand or a spoon.

6.Bake for 12 minutes. Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.


For the Cream Cheese Frosting


1. In a medium bowl, beat together the cream cheese and butter. Then add icing sugar, salt, and vanilla extract. Beat until the frosting is smooth.

3. Once the cookies are completely cool, pipe the frosting onto the cookies. Break one cookie for crumb topping and sprinkle the crumbs on top of the frosting.
