Pumpkin Cupcakes With Cream Cheese Frosting

##Pumpkin Cupcakes



__Ingredients__


- 1/2 cup oil (120ml)

- 1/4 cup granulated sugar (50g)

- 1/2 cup brown sugar (110g)

- 2 eggs

- 3/4 cup pumpkin purée (200g)

- 1 tsp vanilla extract

- 1 cup all purpose flour (120g)

- 1/2 tsp salt

- 1/2 tsp baking soda

- 1 tsp baking powder

- 1 & 1/2 tsp pumpkin spice


__Cream Cheese Frosting__


- 1/3 cup butter (75g)

- 1/2 cup cream cheese (114g)

- 1/2 tsp vanilla extract

- 2 cups icing sugar (240g)



__Recipe__


1. Pour oil in a deep bowl. Add sugars and whisk until well combined.

2. Add eggs and whisk for about a minute.

3. Pour pumpkin purée with vanilla extract and whisk until well blended.

4. Sift all the dry ingredients and mix until no streaks of flour remain.

5. Fill the paper liners three-quarters full with batter.

6. Bake @325°f for 25 minutes.

7. Let them cool in the pan for 10 minutes then cool completely on a wire rack.

8. In a deep bowl pour butter and cream cheese with vanilla and icing sugar. Whisk for about 2-3 minutes until smooth and creamy.

9. Fill the piping bag with frosting and frost cupcakes.

10. Dust some pumpkin spice at the top and decorate with sprinkles.
