Ramadan Fatayer | Chicken Tikka Cheese Bread




__Ingredients For Dough__


- 1 cup water

- 2 tsp yeast

- 2 tsp sugar

- 3 cups all purpose flour

- 1 tsp salt

- 3 tbsp yogurt

- 2 tbsp olive oil

- 1 tsp oil for top


__Ingredients For Chicken__


- 600g chicken thighs

- 3 tbsp yogurt

- 1 tsp ground coriander

- 1 tsp ground cumin

- 1 & 1/2 tsp salt

- 1 tsp red chilli powder

- 1/2 tsp black pepper

- 1/4 tsp citric acid

- 1 tsp garlic paste

- 1 tsp ginger paste

- 3 tbsp oil


__Toppings__


- vegetables

- 200 g shredded cheese

- 1 egg

- sesame seeds


__Recipe__


1. In one cup warm water add yeast and sugar. Stir and cover for 10 minutes.

2. Take 3 cups all purpose flour in a deep bowl. Add salt, yeast mixture, yogurt and olive oil. Mix until well combined. Pour 1 tsp oil at the top and cover for 1 hour.

3. In the mean while, combine all the ingredients for marination. Apply the marination on the chicken for 30-40 minutes.

4. Add 3 tbsp oil in a pan and put all the chicken pieces in it. Cover for 10 minutes at medium heat. Then open the lid and flip the sides of chicken. Cover again for 10 minutes. It should be cooked in 20-25 minutes. Cut chicken into cubes.

5. Dust some flour on your work surface. Roll the dough into it and divide into 18-20 pieces.

6. Roll the dough pieces into small balls.

Cover all the dough balls with a napkin and take one piece. Spread it with your fingers and press it with a glass or small bowl. Poke hole with a fork. Make all the pieces like that. Top it with peppers, onion, tomatoes, olives and chicken cubes. Apply 1 beaten egg at the edges and sprinkle some sesame seeds.

7. Bake the bread at 400°F for 10 minutes. Then take it out and sprinkle some shredded cheese at the top and bake again for 10 minutes.
