Ingredients
- 3/4 cup cake flour (90g)
- 1/4 cup cocoa powder (25g)
- 1/2 tsp salt (2g)
- 1 tsp baking powder (4g)
- 4 eggs
- 3/4 cup sugar (150g)
- 1/4 cup oil (48g)
- 1 tbsp vinegar (14g)
- 1/4 cup milk (60g)
- 1 tsp vanilla extract (4g)
- 1 tsp red food colour
- 2 tbsp hot water (30g)
- 2 tsp sugar (8g)
- berries for topping
Cream Cheese Frosting
- 1/2 cup softened butter (113g)
- 1 block cream cheese (250g)
- 1 tsp vanilla extract (4g)
- a pinch of salt
- 3 cups icing sugar (400g)
Recipe
1. Sift flour, baking powder, salt and cocoa powder in a bowl. Put that aside for later use.
2. Beat eggs for about 2 minutes.
3. Add sugar in batches while mixing.
4. Add oil while mixing.
5. Add vinegar, milk and vanilla extract and mix until well blended.
6. Mix dry ingredients and 1-2 tsp red food colour. Mix just until well combined.
7. Grease your baking pan (9”x13”) and align it with parchment paper. Grease parchment paper.
8. Pour cake batter and spread it with a spatula.
9. Bake @325°f for 20 minutes.
10. Let the cake set for 10 minutes after baking. Remove the cake from the pan and let it cool down completely.
11. Add two tsp sugar in two tbsp hot water and mix until dissolved. Apply it all over the cake with a soft brush.
12. Frosting: Beat butter and cream cheese together until smooth. Add salt, vanilla extract and powdered sugar in batches.
13. Mix together until you get a smooth consistency. Fill the frosting in a piping bag and apply it on cake. Spread it with a rubber spatula.
14. Cut the cake in 4 equal strips. Roll one strip into a circle motion. Take the second strip and roll around the first strip. Keep rolling the other two strips.
15. Decorate the cake with icing and berries.
