Red Velvet Cupcakes


__Ingredients__


- 1/4 cup unsalted butter

- 1/3 cup oil

- 1 cup granulated sugar

- 2 eggs

- 1 tsp vanilla extract

- 1 & 1/4 cup all purpose flour

- 1/4 tsp salt

- 1 & 1/2 tbsp cornstarch

- 2 tbsp cocoa powder

- 1/4 tsp baking soda

- 1/2 tsp baking powder

- 1/3 cup buttermilk

- 1/2 tsp white vinegar

- 2 tsp gel red food

colour


__Frosting__


- 1/2 cup unsalted butter

- 2 cups icing sugar

- 1 tsp vanilla extract

- 1/4 tsp salt


__Recipe__


1. Put 1/4 cup softened butter in a deep bowl. Add 1 cup sugar with 1/3 cup oil. Whisk together until creamy for about 3-4 minutes.

2. Add 2 eggs with 1 tsp vanilla extract and mix until fluffy for about 4 minutes.

3. Sift flour with salt, baking soda, baking powder and cocoa powder.

4. Mix dry ingredients into the wet. Scrape the bowl.

5. Add vinegar, red food colour and butter milk. Mix unti well combined. Scrape the bowl.

6. Scoop into cupcakes liners about half of the way. Bake @350° for about 20 minutes. Let them cool for 1 minute in the pan then transfer to wire rack to cool completely.

7. For butter cream frosting, put 1/2 cup softened butter into a deep bowl. Add two cups icing sugar with 1/4 tsp salt and 1 tsp vanilla extract. Mix until smooth and creamy.

8. Decorate cupcakes with frosting. I’m using 1 cupcake for the crumb topping.
