S’more Cookies






__Ingredients__

__Chocolate Chip S’more Cookies__


- 1/3 cup + 1 tbsp (90g) butter

- 1/3 cup brown sugar (50g)

- 2 & 1/2 tbsp sugar (30g)

- 1 tsp vanilla extract

- 1 egg

- 1/2 tsp baking powder

- 1/2 tsp baking soda

- 1/4 tsp salt

- 1 & 1/3 cup cake flour (160g)

- 1/3 cup dark chocolate chunks/ chips

- 1/3 cup chopped walnuts

- marshmallows, Oreo cookies and chocolate chunks for topping


__Double Chocolate S’more Cookies__


- 90g butter

- 1 tsp vanilla

- 2 & 1/2 tbsp sugar

- 1/3 cup brown sugar

- 1 egg

- 1 cup + 2 tbsp cake flour (130g)

- 1/4 cup cocoa powder (20g)

- 1/4 tsp salt

- 1/2 tsp baking soda

- 1/2 tsp baking powder

- 50g chocolate chips

- 40g chopped hazelnuts

- marshmallows, hazelnuts and chocolate for topping


__Red Velvet S’more Cookies__


- 90g butter

- 50g brown sugar

- 30g sugar

- 1 tsp vanilla extract

- 1 egg

- 1 cup & 3 tbsp of cake flour (140g)

- 3 tbsp cocoa powder (10g)

- 1/2 tsp baking soda

- 1/2 tsp baking powder

- 1/4 tsp salt

- red food colour

- 50g semi sweet chocolate chips

- 20g white chocolate chips

- 40g sliced almonds

- marshmallows, chocolate chips & almonds for topping

_Recipe__


1. In a large bowl, pour butter at room temperature. Add sugars and vanilla extract. Cream together butter and sugars.

2. Add egg and mix until well combined.

3. Sift flour with baking soda, baking powder and salt.

4. Mix until smooth. Then pour chocolate and chopped walnuts. Gently fold in the chocolate and walnuts until well combined.

5. Chill the dough for about 30 minutes.

6. Align your baking sheet with parchment paper. Scoop 1/4 cup of cookie dough. Roll it into a ball. Recipe makes 6 cookies. Each cookie weighs 76-78 grams.

7. Refrigerate the cookie balls for 15 minutes.

8. Then place your thumb into the cold cookie dough ball to create a hole. Stuff it with a marshmallow. Use your hands to press the cookie dough around the sides of the marshmallow. Place some chocolate chunks on the top. You can also use graham crackers.

9. Bake @350°f for 14 minutes. Garnish with Oreo pieces while the cookies are warm. Cool down on a wire rack.

Note: all 3 recipes are the same except the flour and cocoa ratio.
