Strawberry Crunch Cheesecake Cake




__Ingredients__


__Strawberry Cake__


- 1 1/2 cups flour

- 1 1/2 tsp baking powder

- 1/4 tsp salt

- 1/2 cup butter

- 2 tbsp oil

- 1 cup sugar

- 1 large egg

- 1 tsp vanilla extract

- 1/2 cup milk

- 1/2 cup fresh strawberry purée

- 1/2 tsp red food colour

__Cheesecake__


- 2 blocks of cream cheese (500g)

- 1/2 cup sugar

- 1/4 tsp salt

- 2 large eggs

- 1/4 cup heavy cream

- 1 tsp vanilla extract

- 1/2 cup yogurt or sour cream

- 1 1/2 tbsp flour


__Crunch Topping__


- 1/2 cup flour

- 1 pack strawberry jelly

- 1 pack vanilla pudding

- 1/2 cup butter


__Cheese Frosting__


- 250g cream cheese

- 2 cups icing sugar

- 1 tsp vanilla extract

- 1/2 cup butter

- 2 tbsp whipping cream

__Recipe__


1. For Cake: Beat butter, sugar & oil until smooth. Add one large egg and mix well.

2. Mix flour, baking powder and salt. Add milk, vanilla extract, strawberry purée & red food colour. Mix until incorporated.

3. Grease 6” baking pan. Align it with parchment paper. Pour the cake batter into the pan and bake it @350°F for 30-35 minutes.

4. For Cheesecake: beat cream cheese at room temperature for 2 minutes then scrape the bowl with spatula.

5. Add yogurt and whipping cream. Mix everything until well combined. Scrape the bowl again. Add eggs, salt and vanilla extract. Mix until smooth. Add flour and mix well.

6. Grease the 6” baking pan. Align it with parchment paper. Pour the cheesecake batter.

7. Cover the pan with aluminum foil OR put the 6” pan into the bigger pan then into the rooster pan for water bath.

8. Pour hot water in the rooster pan and bake it @325°F for 1 hour then turn off the heat and leave it inside the oven for 40 minutes without touching.

9. Remove the water bath and leave it at room temperature for 1 hour. Remove the outer ring and refrigerate it for 1-2 hours.

10. Crunch Topping: Mix 1 pack strawberry jelly in 1/4 cup flour and 1/4 cup butter. Spread the mixture into the baking tray. Mix 1 pack vanilla pudding mix with 1/4 cup flour and 1/4 cup butter. Spread the mixture into the baking tray. Bake @350°F for 6-7 minutes.

11. Let the crunch cool down then crush it in food processor.

12. Cheese Frosting: beat cream cheese and butter together until smooth. Add powdered sugar, cream and vanilla extract. Beat until fluffy.

13. Cut the strawberry cake in two parts. Apply frosting and layer it with cheesecake. Apply frosting on cheesecake and layer it with other half part of the strawberry cake.

14. Cover the whole cake with frosting and crunch topping. Decorate the cake with frosting and fresh strawberries. Enjoy!
