No Chill Time Required For The Dough:
The dough doesn’t need to be chilled before rolling and cutting out shapes, and they hold crisp edges when baked, so they’re great for all cookie cutters. The flavour is buttery and delicious!
Royal Icing:
The perfect sugar cookie for decorating with my classic easy royal icing made with meringue powder. It’s easy to work with, sets quickly, and won’t get hard when it dries.
__Ingredients__
- 1 cup softened butter
- 1/2 cup icing sugar
- 1 tsp vanilla extract
- 1 1/2 cup all purpose flour
- 1/2 cup cornstarch
- 1/4 tsp salt
__Royal Icing __
- 3 cups icing sugar
- 2 tbsp meringue powder or 2 egg whites
- 1 tsp vanilla extract
- 1/4 cup water + 2 tbsp
- 1 tbsp corn syrup(optional)
- food colour
__Cookie Dough Recipe__
1. Beat butter and sugar together until creamy.
2. Add flour, cornstarch and salt. Mix until well combined.
3. Sprinkle some flour on your work surface. Put the dough on the surface and combine it. Divide the dough into two parts. It will be easy to roll in parts.
4. Roll the dough with rolling pin. Roll and rotate. Keep rolling and rotating. Cutout with cookie cutter. Place the cookies on the cookie sheet with parchment or you can use silicone cookie sheets.
5. Combine the leftover dough from the first half with the other half of the dough. Roll and make more cookies.
6. Recipe makes 24 cookies. Bake at 325°F for about 10 minutes.
7. Let the cookies cool down before applying the icing.
__Royal Icing__
1. Take 3 cups of icing sugar. Add 2 tbsp meringue powder, 1 tsp vanilla extract, 1/4 cup water and 1 tbsp corn syrup. Corn syrup is optional but recommended. It gives a little shine to your Royal icing.
2. Mix until well combined. Add 2 tbsp more water and mix until you get a smooth texture.
3. Divide the icing into three parts. Add food colour. Fill in the piping bags.
