Taiwanese Castella Cake



__Ingredients__


- 1 cup(125g) cake & pastry flour

- 1/2 cup butter (115g)

- 1/2 cup sugar (115g)

- 1/2 cup milk (115g)

- 7 eggs

- 1 tsp vanilla extract


__Recipe__


1. Pour milk and butter in a saucepan. Heat up until butter melts down completely. Pour the mixture into a large bowl.

2. Separate the egg yolks from egg whites. Cover the egg whites with a cling wrap and place them into the fridge. Pour egg yolks into the milk bowl, one at a time and whisk until well blended. Add vanilla extract and mix well.

3. Sift flour into the mixture and mix until well combined. Keep the batter aside for later use.

4. Remove the wrap from the egg whites and whisk until foamy for about one minute. Gradually add sugar and whisk until stiff peaks.

5. Gradually add the meringue into the cake batter and gently fold it with a rubber spatula. Please watch the video for the process.

6. Grease your baking pan a little and align it with parchment paper.

Pour the cake batter and break any bubbles with a spatula. Tap the pan a few times on the counter to release any remaining bubbles.

7. Place the cake pan into a larger pan. Pour the hot water into the large pan.

8. Bake @300°F for 1 hour and 15 minutes. If the top is not enough golden, broil the cake @300°F for 5 minutes.

9. Take the cake out from the water bath and remove the parchment paper.

10. Cut the cake with a sharp knife and enjoy!
