The Best Cake Everyone Is Talking About!

__Ingredients__


- 4 egg yolks

- 1/2 cup sugar

- 1/3 cup oil

- 1/4 cup milk

- 1 tsp vanilla extract

- 3/4 cups cake & pastry flour

- 1/2 tsp baking powder

- 1/4 tsp salt


- 4 egg whites

- 1/3 cup sugar

- 1/2 tsp vinegar


__Cream Filling__


- 1/2 cup butter

- 1 cup icing sugar

- 1 tsp vanilla extract

- 1/4 cup whipping cream

- 1/3 cup white chocolate chips

- 50g chopped hazelnuts

- 1/4 cup shredded coconut


__Topping__


- 1 cup white chocolate chips

- 2 tbsp cooking oil

- 50g chopped hazelnuts

- 2 tbsp shredded coconut for dusting



__Recipe__


1. Beat egg yolks with 1/2 cup sugar and 1/3 cup oil until well combined.

2. Add milk and vanilla extract. Mix everything well.

3. Sift cake flour with salt and baking powder.

4. Add dry ingredients into the wet and mix until well combined.

5. Beat egg whites with 1/3 cup sugar and 1/2 tsp vinegar until stiff peaks.

6. Fold eggs whites into the cake batter in batches. Mix with spatula.

7. Grease your baking pan (10”x14”) and align it with parchment paper then grease again. Pour the cake batter. Spread evenly with spatula. Bake at 325°F for 15-20 minutes.

8. For filling: Beat butter with vanilla extract, sugar and whipping cream until light and fluffy. Add melted chocolate and mix again. Add 1/4 cup shredded coconut and 50g chopped hazelnuts.

9. Take the cake out onto a wire rack and remove the parchment paper. Dust some icing sugar on parchment paper and put your cake on it. Gently roll it with parchment paper and keep it in the fridge for 30 - 40 minutes.

10. Open the rolled cake and spread the filling evenly. Roll again, seal the parchment paper with tape and keep it in the fridge for an hour.

11. Microwave 1 cup white chocolate chips with 2 tbsp of oil for 40 seconds. Mix well and add 50g chopped hazelnuts.

12. Pour the chocolate mixture on the cake spread it with spatula. Sprinkle shredded coconut and keep it in the fridge until sets.

Cut it with sharp knife. This cake is super moist with delicious cream and chocolate topping. It tastes like Raffaello Chocolate.
