The Best Moist Chocolate Cake Using Only One Egg

__Ingredients__


- 1/2 cup oil (112g)

- 1 cup sugar (200g)

- 1 egg

- 1 tsp vanilla extract

- 1 cup flour (120g)

- 1/2 cup coca powder (60g)

- 1 tsp baking powder (5g)

- 1/2 tsp salt (3g)

- 1/2 tsp baking soda (3g)

- 1/2 tsp instant coffee (optional)

- 1/2 cup milk (145g)

- 1/2 cup hot water (115g)


__Syrup__


- 2 tbsp hot water

- 1 tsp sugar

- 1 tsp cocoa powder


__Ganache__


- 3/4 cup chocolate chips (130g)

- 1/2 cup heavy whipping cream (120g)





Recipe


  1. In a deep bowl, pour oil, sugar, egg and vanilla extract in a large bowl. Mix until well blended.

  2. Sift flour, cocoa powder, baking powder, baking soda and salt. Mix the dry ingredients into the mixture. Coffee is optional but highly recommended.

  3. Add milk and mix until you get a smooth consistency.

  4. Pour hot water and mix until combined.

  5. Pour the batter into a greased pan lined with parchment paper.

  6. Bake @350°f for 40-45 minutes.

  7. Let it sit in the pan for 5 minutes. Check if it’s done with a skewer.

  8. Remove the cake from the pan and put it upside down.

  9. Mix 2 tbsp hot water with 1 tsp cocoa powder and 1 tsp sugar. Apply the syrup on top of the cake with a brush.

  10. Pour hot cream on top of the chocolate chips and mix until you get a smooth ganache.

  11. Spread the ganache on top of the cake and garnish with some chopped chocolate or sprinkles. Enjoy!
